Matcha and pistachio are having a moment, and this recipe shows why. These protein-packed, energising bites combine fragrant ceremonial-grade matcha with the creamy richness of our organic almond butter and the gentle sweetness of organic maple syrup. Coconut flour and vanilla protein powder give them a soft, chewy texture while adding a nourishing boost. Each ball is rolled in finely ground pistachios for a pop of colour, crunch, and nutty flavour that perfectly complements matcha’s earthy notes. Quick, portable, and delicious, they’re the perfect pick-me-up anytime — mid-morning, post-workout, or during the 3pm slump.

Ingredients

100g almond flour 

30g Biona Organic Coconut Flour 

30g vanilla protein powder 

1 tbsp matcha powder 

115g Biona Organic Pure Maple Syrup 

80g Biona Organic Almond Butter 

Ground pistachios, for serving 

Method

  1. In a medium bowl, add all ingredients, minus the ground pistachios, and mix until fully combined. 
  2. Shape into bite-sized balls (either 9 medium-sized ones or 18 smaller ones), then roll them into the ground pistachio and place in the fridge for 2 hours. 
  3. Once the balls are fully set, you can enjoy a mid-day energy boosting treat.
